Elpis cultivates and develops duckweed – plants such as Wolffia (the best known) – rich in proteins and nutrients, using hydroponic cultivation.

Wolffia is the quintessential green vegetable caviar, a small-sized freshwater plant with globose shoots to be used for any food or beverage application. Wolffia is supplied fresh, frozen and in powder form.

It has no taste or smell and can therefore be used in the kitchen without running the risk of altering the taste of the dishes. It can be added to smoothies and soups, combined with pancakes and crêpes, used to color fresh pasta or added to the preparation of veggie burgers. Its versatility can help increase the protein and fiber content of the dish, without adding cholesterol.

Nutritional characteristics
Wolffia contains a percentage of protein equal to 40% of its weight, offers 9 essential amino acids with a profile similar to protein eggs, dietary fiber, polyphenols, minerals (calcium, iron and zinc) and vitamins (especially B12).
This plant has actually been cultivated for centuries in Southeast Asia and has been consumed by the Israeli population for many years.
